CHERVIL

Chervil (Anthriscus cerefolium), sometimes called French parsley or garden chervil (to distinguish it from similar plants also called chervil), is a delicate annual herb related to parsley. It was formerly called Myrrhis due to its volatile oil with an aroma similar to the resinous substance myrrh. It is commonly used to season mild-flavoured dishes and is a constituent of the French herb mixture fines herbes.

NUTMEG PELARGONIUM

Pelargonium × fragrans is a pelargonium hybrid between Pelargonium odoratissimum and Pelargonium exstipulatum. It is in the subgenus Reniforme along with Pelargonium sidoides and Pelargonium abrotanifolium. Pelargonium comes from the Greek; Pelargos which means stork. Another name for pelargoniums is storksbills due the shape of their fruit. Fragrans refers to the fragrant leaves.

Pelargonium × fragrans, like its parent Pelargonium odoratissimum, is a small, spreading species which only grows up to 30 cm high and 60 cm wide. It has small white flowers and its leaves are waxy, green and ovate with slightly fringed edges. It has a sweet, slightly spicy, eucalyptus-like ("nutmeg") scent. Nutmeg-Scented Pelargonium makes a nice scented border in zones 9 and up, and a great summer bloomer for other zones. In Zone 8, during a very cold winter, it dies back but returns fairly reliably. If the winter is milder, Nutmeg Pelargonium will stay evergreen and even bloom early in Zone 8.

ROSEMARY

Rosmarinus officinalis, commonly known as rosemary, is a woody, perennial herb with fragrant, evergreen, needle-like leaves and white, pink, purple, or blue flowers, native to the Mediterranean region. It is a member of the mint family Lamiaceae, which includes many other herbs. The name "rosemary" derives from the Latin for "dew" (ros) and "sea" (marinus), or "dew of the sea". The plant is also sometimes called anthos, from the ancient Greek word ἄνθος, meaning "flower". The plant has a fibrous root system.

Rosemary is an aromatic evergreen shrub that has leaves similar to hemlock needles. The leaves are used as a flavouring in foods such as stuffings and roast lamb, pork, chicken and turkey. It is native to temperate climates, but is reasonably hardy in cool climates. It can withstand droughts, surviving a severe lack of water for lengthy periods. Forms range from upright to trailing; the upright forms can reach 1.5 m tall, rarely 2 m. The leaves are evergreen, 2–4 cm long and 2–5 mm broad, green above, and white below, with dense, short, woolly hair.

The plant flowers in spring and summer in temperate climates, but the plants can be in constant bloom in warm climates; flowers are white, pink, purple or deep blue. Rosemary also has a tendency to flower outside its normal flowering season; it has been known to flower as late as early December, and as early as mid-February. Since it is attractive and drought-tolerant, rosemary is used as an ornamental plant in gardens and for xeriscape landscaping, especially in regions of Mediterranean climate. It is considered easy to grow and pest-resistant.

Rosemary can grow quite large and retain attractiveness for many years, can be pruned into formal shapes and low hedges, and has been used for topiary. It is easily grown in pots. The groundcover cultivars spread widely, with a dense and durable texture. Rosemary grows on friable loam soil with good drainage in an open, sunny position. It will not withstand waterlogging and some varieties are susceptible to frost. It grows best in neutral to alkaline conditions (pH 7–7.8) with average fertility. It can be propagated from an existing plant by clipping a shoot (from a soft new growth) 10–15 cm long, stripping a few leaves from the bottom, and planting it directly into soil.

FEVERFEW

Tanacetum parthenium, feverfew, is a traditional medicinal herb in the Asteraceae family which is commonly used to prevent migraine headaches, and is also occasionally grown for ornament. It is also commonly seen in the literature by its synonyms, Chrysanthemum parthenium and Pyrethrum parthenium. It is also sometimes referred to as bachelor's buttons or featherfew.

The plant is covered by flowers reminiscent of daisies and grows into a small bush up to around 46 cm high with citrus-scented leaves. It spreads rapidly, and will cover a wide area after a few years. The species grows to up to 60 cm high. The leaves are variously pinnatifid with conspicuous flowers up to 20 mm across. The outer florets are all ligulate and white. The inner florets are yellow and tubular in lax corymbs.

Feverfew has been used as a herbal treatment to reduce fever and to treat headaches, arthritis and digestive problems. The active ingredients in feverfew include parthenolide. There has been some scientific interest in parthenolide, which has been shown to induce apoptosis in some cancer cell lines in vitro and potentially to target cancer stem cells.

CHICORY FLOWERS

Common chicory, Cichorium intybus, is a somewhat woody, perennial herbaceous plant of the dandelion family usually with bright blue flowers, rarely white or pink. Many varieties are cultivated for salad leaves, chicons (blanched buds), or for roots (var. sativum), which are baked, ground, and used as a coffee substitute and additive. It is also grown as a forage crop for livestock. It lives as a wild plant on roadsides in its native Europe, and now common in North America, China, and Australia where it has become widely naturalised. "Chicory" is also the common name in the United States for curly endive (Cichorium endivia); these two closely related species are often confused.

CHIVES IN FLOWER

Chives is the common name of Allium schoenoprasum, the smallest species of the edible onion genus. A perennial plant, it is native to Europe, Asia and North America. A. schoenoprasum is the only species of Allium native to both the New and the Old Worlds. The name of the species derives from the Greek skhoínos (sedge) and práson (leek). Its English name, chives, derives from the French word cive, from cepa, the Latin word for onion.

Chives are a commonly used herb and can be found in grocery stores or grown in home gardens. In culinary use, the scapes and the unopened, immature flower buds are diced and used as an ingredient for fish, potatoes, soups, and other dishes. Chives have insect-repelling properties that can be used in gardens to control pests.

Chives are a bulb-forming herbaceous perennial plant, growing to 30–50 cm tall. The bulbs are slender, conical, 2–3 cm long and 1 cm broad, and grow in dense clusters from the roots. The scapes (or stems) are hollow and tubular, up to 50 cm long and 2–3 mm across, with a soft texture, although, prior to the emergence of a flower, they may appear stiffer than usual. The leaves, which are shorter than the scapes, are also hollow and tubular, or terete, (round in cross-section) which distinguishes it at a glance from Garlic Chives.

The flowers are pale purple, and star-shaped with six petals, 1–2 cm wide, and produced in a dense inflorescence of 10-30 together; before opening, the inflorescence is surrounded by a papery bract. The seeds are produced in a small three-valved capsule, maturing in summer. The herb flowers from April to May in the southern parts of its habitat zones and in June in the northern parts (November to February in the Southern Hemisphere).

PENNYROYAL

Mentha pulegium, commonly (European) pennyroyal, also called squaw mint, mosquito plant and pudding grass, is a species of flowering plant in the family Lamiaceae native to Europe, North Africa, and the Middle East. Crushed pennyroyal leaves exhibit a very strong fragrance similar to spearmint. Pennyroyal is a traditional culinary herb, folk remedy, and abortifacient. The essential oil of pennyroyal is used in aromatherapy, and is also high in pulegone, a highly toxic volatile organic compound affecting liver and uterine function.

Pennyroyal was commonly used as a cooking herb by the Greeks and Romans. The ancient Greeks often flavoured their wine with pennyroyal. A large number of the recipes in the Roman cookbook of Apicius call for the use of pennyroyal, often along with such herbs as lovage, oregano and coriander. Although it was commonly used for cooking in the Middle Ages, it gradually fell out of use as a culinary herb and is seldom used as such today. The fresh or dried leaves of the plant were used to flavour pudding.

BLUE SAGE

Salvia officinalis 'Purpurascens' or purple sage, is a useful and beautiful addition to the home garden. Cooks and gardeners alike are indebted to this evergreen perennial for the unique, pungent flavour and aroma that its gray-green leaves produce. This cultivar has leaves suffused with steely-gray purple.

It forms a 40-50 cm tall bush with woody stems that may be trimmed back to newly emerging growth or strong stems in spring. In early to mid-summer, it sends up lavender-purple flower spikes; it has both ornamental and culinary qualities in an herb garden. It tolerates alkaline soils, but cannot survive wet winter conditions.

Salvias are some of the showiest plants for containers, annual borders, and mixed borders. Butterflies, bees and hummingbirds love them. Provide moist but well-drained soil in full sun. The plant tolerates alkaline soil.

FLOWERING BASIL

Basil, or Sweet Basil, is a common name for the culinary herb Ocimum basilicum, of the family Lamiaceae (mints), sometimes known as Saint Joseph's Wort in some English-speaking countries.

Basil, originally from India, but thoroughly familiar to Theophrastus and Dioscorides, is a half-hardy annual plant, best known as a culinary herb prominently featured in Italian cuisine, and also plays a major role in the cuisine of Taiwan and the Southeast Asian cuisines of Indonesia, Thailand, Vietnam, Cambodia, and Laos. Depending on the species and cultivar, the leaves may taste somewhat like anise, with a strong, pungent, often sweet smell.

There are many varieties of Ocimum basilicum, as well as several related species or species hybrids also called basil. The type used in Italian food is typically called sweet basil, as opposed to Thai basil (O. basilicum var. thyrsiflora), lemon basil (O. × citriodorum) and holy basil (Ocimum tenuiflorum), which are used in Asia. While most common varieties of basil are treated as annuals, some are perennial in warm, tropical climates, including holy basil and a cultivar known as 'African Blue'.

Basil is originally native to India and other tropical regions of Asia, having been cultivated there for more than 5,000 years.

ROSEMARY FOR REMEMBRANCE...

Rosemary, Rosmarinus officinalis, is a woody, perennial herb with fragrant, evergreen, needle-like leaves and white, pink, purple or blue flowers, native to the Mediterranean region. It is a member of the mint family Lamiaceae, which includes many other herbs, and is one of two species in the genus Rosmarinus. The name "rosemary" derives from the Latin for "dew" (ros) and "sea" (marinus), or "dew of the sea" because in many locations it needs no water other than the humidity carried by the sea breeze to live. The plant is also sometimes called Anthos, from the ancient Greek word ἄνθος, meaning "flower".

Rosemary is used as a decorative plant in gardens and has many culinary and medical uses. The plant is said to improve the memory and is used as a symbol of remembrance, especially in Australia and New Zealand to commemorate ANZAC Day. The leaves are used to flavour various foods, like stuffings and roast meats. Rosemary contains the antioxidants carnosic acid and rosmarinic acid, and other bioactive compounds including camphor, caffeic acid, ursolic acid, betulinic acid, rosmaridiphenol, and rosmanol. Some of these may be useful in preventing or treating cancers, strokes, and Alzheimer's Disease.
